7 Generations of Maple Tradition:

Here is my brother Ed Smith (left), myself Jim Smith (center) and one of my sister's Lisa O'Day (right), taken in front of the Sugar House my father and I built in 1992.  This Sugar House was lost in a fire a few days after the picture along with almost our entire crop of 400 gallons of syrup that year. 

Maple Facts:

  • A Sugar House is a building where maple sap is boiled.
  • Maple sap is boiled in an evaporator and when enough water is boiled off it becomes Maple Syrup.  At this point it is filtered and then graded by comparing the shade of it to known samples in clear glass containers.
